LEs usually work in a time or quantity based situation. The company will say either how long the sale will last or how many of that particular doll will be sold. Occasionally companies will have a set limited number and never actually release how many are to be made (rarely happens?). What does it really mean?

Limited Edition (LE) is used when an item, doll, or something along those lines is limited to a certain extent. It is important to know what companies mean by "limited"; for dolls, sometimes it can mean a standard sculpt with a special faceup or clothes or skin tone, or even a limited sculpt altogether. Sometimes LEs are re-released at later dates in different versions, meaning that the set as a whole was limited rather than the doll itself.
